It began in a small kitchen outside Houston, where a family recipe for carnitas was passed down not in writing, but in patience — hours of watching, learning, and waiting for the moment the meat just falls apart.
When that kitchen closed, the recipe didn't. We took it to the streets, loaded it into a truck, and started rolling through Houston's neighborhoods — showing up where people actually are, not where they have to go out of their way to find us.
Every batch is still slow-cooked the same way. Every tortilla is still pressed fresh. That's not a marketing line — it's just how we do it, because that's how it was done before there was a truck to put it on.
